In the last 25 years in the hospitality industry, I have learned what means the most about creating a bar program, and that is that every business is unique and requires more than just a generalized program to curate exceptionality. I prefer working hand in hand with clients to create special and unique experiences for guests, creating a storyline for the bar that is within the motif and brand that the restaurant has already constructed. I delve into different ingredients, spirits, and glassware that will reflect a deeper story within the brand while implementing techniques to maintain functionality, speed and productivity seamlessly.

Telling a Liquid Story

When every detail of a restaurant’s design and cuisine has been carefully formulated, the cocktail menu should reflect that dedication. I use color, glassware, garnishes, smells, and ingredients leaving guests entranced to try more. I create a story from start to finish, aperitif style cocktails to entice the appetite, cocktails that pair to dishes throughout the menu, and those that punctuate the dining experience.

Staff Training
​
I spend time with the staff to focus on preparation of ingredients and cocktails, creating systems for batching and inventory, teaching methods of producing cocktails with speed and accuracy, and, most importantly, tips on how to maintain a high level of hospitality.
